Lemon lamb meatballs with courgetti

I’m trying to be super healthy at the moment and this week I have only had a couple of slip ups so far, one included a fraught afternoon which ended in a dalliance with a digestive biscuit, as you do. A healthy organic meal shouldn’t be hard to come by though!

I have really been enjoying trying some new recipes out and this dish is by far a winner here, so I thought I would share it with you. Get ready for a completely guilt-free, sugar-free supper that will not only satisfy but tick all the right boxes in the taste department too…

Recipe from Happy Sugar Habits (mentor me off sugar)-quantity of ingredients increased to feed my family of 5

Ingredients

650g mince lamb

zest of a lemon

3 cloves garlic, finely chopped

small bunch flat leaf parsley, finely chopped

courgetti ready spiralised it’s my new fav! This came from the Barfoots ‘Made with Love’ veg box

dash olive oil

salt and pepper to taste

Method

  • Preheat oven to 180 degrees/Gas 6
  • Add mince lamb, 2 of the chopped garlic cloves, herbs and salt and pepper to a bowl.
  • Mix together with your hands and form into balls.
  • In a frying pan brown meatballs lightly in a little olive oil (I added this step to give the meatballs some colour but you could pop them straight in the oven)
  • Once brown, transfer to a baking dish and cook in the oven for 15- 20 minutes.
  • Stir-fry the courgetti for a few minutes
  • Transfer to a plate and drizzle with a little lemon juice, place the meatballs on top.

I served this with some cherry tomatoes, cucumber and hummus with sprinkled parsley over the top for a garnish. It was a really delicious and satisfying meal. Let me know if you try this.

This looks insanely delicious!!!! I love lamb but always shy away from meatballs as mine end up very dry. I’m going to have to give this a go! xx

Loving the sound of this, I have so got to try it, off to put it on the menu for next week.
I have yet to try courgetti, maybe this will be the first step to trying it, specially if I can get it ready prepared as I do not have a spiralizer :)

Did I read correctly? Did you end the afternoon with ‘a’ digestive, or was it meant to read ‘a packet of’ digestives?…hmmmm….With a gorgeous, healthy meal like that, I’m sure you’re doing a fabulous job. I must get a spiraliser; haven’t seen it pre prepared in our Aussie aisles. #TheList

Yummy! We are having lamb tonight and now I can’t wait, hubby is cooking which is a bonus as I can barely cook and since his new job I have been the family chef, so it is nice to have him on duty tonight! #Thelist

I love courgetti! It is perfect when you have a sauce and meatballs. This recipe looks great and really easy too :-) Dalliance with a digestive did make me laugh though! :-) #thelist

Yum yum, that looks delicious! I havent tried courgetti yet, I’m not a fan of courgette in its original form but I do wonder if it would be more appealing like this! #thelist x

This sounds like a really easy recipe to make and I love lamb kebabs, which are similar right? Don’t worry about the digestive biccy, we all need a little treat even while we’re eating healthier! x #thelist

Yuuuum that looks absolutely delicious – and totally healthy! I just bought myself a spiraliser – I’m all for a trend! – so I’m going to make this in the next couple of weeks :) I’ll send you a pic – which will be nothing like as good as yours :) x

These sound delicious!! I have two recipes that I do with mince lamb, which I rotate on a bi-weekly basis – so these would be a refreshing (and much welcomed) addition!!
