I decided to do white, pink and milk chocolate versions and then used what sprinkles I had in my cupboard to decorate them. They turned out really well, and I thought they looked a bit like little bunches of flowers which just increased the cute factor.
You will need
- marshmallows
- chocolate for melting
- cake pop sticks (or straws would work equally well)
- sprinkles to decorate-I used chocolate strands, mini nonpareils (which are posh 100s and 1000s) red mini toffee, white chocolate sprinkles and desiccated coconut.
Method
- With a sharp knife make a small incision in the end of a marshmallow and stick in your cake pop stick.
- Continue until you've skewered all the marshmallows.
- Pop them in the freezer for 5 minutes, this will make them easier to work with.
- Meanwhile, decide which colour chocolate you want to begin with first and melt it in the microwave for 20 seconds at a time, stirring regularly and taking care not to burn it.
- Dip the marshmallows one at a time into the melted chocolate. It's trial and error to see how much chocolate you need to use but it's not rocket science! I got out a load of mugs and stood the marshmallows in them so I didn't smudge the chocolate. This was a bit like a reverse game of Kerplunk, trying not to touch sticks!
- Before the chocolate is completely set dip into whichever sprinkles you've decided to use. I would recommend using desiccated coconut on a few of them as it gives such a lovely texture and tastes delicious.
When I did the pink chocolate I left a few of them plain and twiddled the marshmallow on the edge of the bowl to get a rose effect.
I displayed them in a mini vase and a jam jar, they made the perfect centrepiece for a dinner party and everyone really enjoyed them.

What’s the shelf life of these when made? I want to make them ahead but I don’t know how long they will be good for before the party.

Hi, these have a really good shelf life. You can store them with plastic wrap or keep in an airtight container. Refrigerate plain chocolate ones if it's hot where you are but not anything with sprinkles. They will keep for more than a week but I'd say 3 days prior is a safe bet just to ensure the chocolate still looks good for the party. Let me know how you get on!
