Ingredients
 

Ingredients:

  • 2 cups plain flour
  • 2 tsps baking powder
  • ¾ cup brown sugar
  • ¾ veg oil
  • 2 eggs
  • 1 cup thick natural yoghurt
  • ½ tsp vanilla bean paste
  • zest of 2 limes
  • 1 cup shredded coconut
  • 80 g white chocolate cut into small pieces

Instructions
 

  • Preheat oven to Gas Mark 4/180 degrees line a muffin tray with 12 cases.
  • Place flour baking powder and sugar in a large bowl. Mix and make a well in the centre. In a jug place oil, eggs, yoghurt and vanilla, whisk to combine. Add the wet ingredients to the dry and stir until just combined. Fold through the lime zest, coconut and chocolate.
  • Divide the mix between the 12 cases and put in the oven. Bake for around 15-20 minutes. Test they're cooked by feeling the top of one, it should bounce back when you press.
