This is the easiest, quickest and most delicious no-bake Rocky Road recipe, you won't be able to resist it!
Rocky Road is just perfect for those times when you need to throw a sweet treat together with limited time. Switching up a base Rocky Road recipe and adding Maltesers is a fun way to add a bit of variety.
Maltesers Rocky Road is so cheap to make and really easy. Perfect for an afterschool snack or as a contribution to a school cake sale.
But be warned it's incredibly addictive, so you might need to make extra!
As I mentioned it's easy peasy to make - all you need to do is crush up the biscuits so they are mostly small pieces but a few crumbs and larger pieces of biscuit are fine.
I put mine into a ziplock bag and give them a good bash with a rolling pin. Once that's done, tip them into a mixing bowl and add the marshmallows and Maltesers. Stir them together so everything is evenly distributed then it's time to prep the wet ingredients.
To make everything stick together you'll need to melt the milk and dark chocolate, butter and golden syrup in a medium-size saucepan over a low heat.
Pour the melted mixture into the bowl containing the dry ingredients and give everything a really good mix.
Some of the marshmallows will melt but that's to be expected. When everything in the bowl has been coated in chocolate, tip it into a 20cm square tin lined with baking paper.
Use a spatula to press the mixture down then melt the white chocolate and pour it over the top.
As white chocolate seizes easily it can be a bit of a faff to melt in the microwave or in a saucepan on the hob. I recommend you cut the white chocolate into small pieces then put them in a heatproof bowl set over a pan of simmering water. That way the chocolate won't burn.
Once you've poured the white chocolate over the top of the Rocky Road use the back of a spoon to spread it all over the top and make it even. Then press more Maltesers on the top.
The whole tin can then go into the fridge where it will need a couple of hours to set.
That's it. Told you it was easy!
I'm not going to lie, I can usually show quite a lot of restrain with all the desserts and sweet treats I make but I find it so difficult to resist Malteser Rocky Road.
Every time I went to the fridge I ended up eating a piece. Oops!

Top tips

- You can use all milk or all dark chocolate instead of a mixture of both.

- For the topping, melt the white chocolate in a heatproof bowl set over a pan of simmering water, otherwise, it's likely to burn.
- The Malteser Rocky Road should only take an hour or two to set in the fridge. If you find it's too hard, leave it to come to room temperature before you slice it.
- Use a sharp knife to cut the Rocky Road up into squares. I cut mine approximately 5cm by 5cm.

Malteser Rocky Road - Easiest Recipe Ever!
Malteser Rocky Road made from crushed malt biscuits, mini marshmallows, milk, dark and white chocolate and of course...oodles of Maltesers.
Ingredients
- 200g (1 packet) malt biscuits
- 100g (2 cups) mini marshmallows
- 189g (1 sharing bag) Maltesers
- 100g (½ cup) milk chocolate, broken up
- 100g ½ cup) dark chocolate, broken up
- 135g (½ cup) butter, cut into pieces the same size as the chocolate
- 3 tbsp golden syrup
Topping
- 200g white chocolate, broken up
- 100g Maltesers
Instructions
- Line a 20cm square baking tin with baking paper and set it aside.
- Put the biscuits into a ziplock bag and bash them up with a rolling pin. You want mostly small bite-sized pieces but some crumbs and larger chunks are ok.
- Tip the bashed up biscuits into a large bowl. Add the mini marshmallows and Maltesers. Mix together evenly to distribute the ingredients.
- In a medium-sized saucepan, add the milk chocolate, dark chocolate, butter and golden syrup. Melt together gently over very low heat.
- Tip the melted chocolate into the biscuit mixture and stir thoroughly until everything in the bowl has a good coating of chocolate.
- Transfer the mixture into the prepared 20cm square tin. Press the mixture down with a spatula until the surface is smooth and even.
- Put the white chocolate into a heatproof bowl set over a pan of simmering water. Melt the chocolate then pour it on top of the Rocky Road. Use the back of a spoon to spread the white chocolate out evenly.
- Add the rest of the Maltesers on top of the white chocolate and press them down lightly with your hands.
- Put the tin in the fridge where the Malteser Rocky Road will take 1-2 hours to set.
