Combine dark and milk chocolate, glace cherries, mini marshmallows and a big helping of sweet and salted popcorn to create this amazing rocky road!
During the summer our whole family on my husband's side went to stay in a holiday cottage in Cornwall. There were 6 kids in total so as well as providing a grown-up treat for the adults I took along a tray of popcorn rocky road for the kids to enjoy.
I knew the brightly coloured sprinkles and pieces of popcorn jutting out from the rocky road would look inviting, and I wasn't wrong.
Each time I opened the fridge another little square from the tray was missing having been pilfered by a tiny hand!
This popcorn rocky road didn't last long and when you make it, yours won't either.
Rocky road has everything I enjoy: crunchy thanks to the biscuits, sweet, chocolatey and a little bit salty.

WHAT YOU NEED TO MAKE POPCORN ROCKY ROAD
Rich Tea Biscuits - I went with rich tea but you could use digestives or graham crackers. The crushed biscuits provide substance and a lovely crunch.
Butter and Golden Syrup- the butter and syrup help to bind and set all the ingredients together. Use unsalted butter because there's enough salt in the popcorn. If you can't get golden syrup then substitute it with corn syrup or honey.
Dark and Milk Chocolate - I like to use a mix of Cadbury Bournville and Cadbury dairy milk chocolate. I know some people are not keen on dark chocolate, this recipe will work with all milk chocolate. However, dark chocolate really helps to intensify the chocolatey flavour and gives the rocky road a better appearance.
Mini Marshmallows - are a given in my book, it's not a rocky road without them!
Glaće Cherries - for sweetness and a pop of colour.
Popcorn - the star of the recipe. I used sweet and salted popcorn to balance the flavour in the rocky road.
Sprinkles - totally optional but a really fun touch. I buy all my sprinkles from Sweet Layer Cake, for this recipe I used the Pastel Chocolate Balls.
HOW TO MAKE POPCORN ROCKY ROAD
Making Popcorn Rocky Road couldn't be easier, just follow the instructions with step by step images below. There's also a video in the recipe card to help you.
1. Begin by lining a 20cm square baking tin with greaseproof paper.
2. Bash up the rich tea biscuits, you can do this by adding them to a zip lock bag and using a rolling pin. Or you can put them into a bowl a few at a time and bash them up with a wooden spoon. You're looking for a combination of crumbs and larger pieces of biscuit.
3. Add the crushed biscuits, marshmallows, glaće cherries, and popcorn into a large mixing bowl and give it all a good mix up.
4. Cut the dark and milk chocolate into small pieces and put them in a saucepan with the butter and golden syrup. Melt together over a very low heat or your chocolate might seize. This is a really good video showing you how to fix seized chocolate (I've used the advice myself!)
5. Add the dry ingredients to the melted chocolate in batches, mixing to coat everything really well.
6. Put a layer of popcorn into the baking tin.
7. Then add the rocky road mixture on top, pressing down firmly with a spoon.
8. Press a few sprinkles on top and another handful of popcorn.
9. Put the popcorn rocky road into the fridge for a couple of hours. Once set, cut into squares and enjoy!
TOP TIPS
- You can use any type of popcorn you like, salted caramel, toffee coated or plain air-popped will work just as well.
- Remember to heat the chocolate, butter and syrup on a very low heat or it will seize. If this happens, remove from the heat and beat in a tablespoon of cold water until it looks smooth.
- Popcorn Rocky Road will keep in an airtight container in the fridge for at least a week but it doesn't freeze well.
- Popcorn Rocky Road tastes better eaten at room temperature.
