Everyone's favourite Rice Krispie Treats flavoured with Biscoff and topped with white chocolate.
These delicious squares are chewy, sweet and unbelievably delicious. So good, you'll never be able to stop at one. The good news is they are super easy to make and you'll only need 5 ingredients.

These Biscoff Rice Krispie Treats might look familiar because I decorated them in the same way as my Biscoff Rocky Road. Mainly because I love the way the Biscoff looks swirled into white chocolate and the round Biscoff Cream biscuits are brilliant to decorate this sort of thing with.
As you can see, I've cut them into 9 squares. This is really only so they look pretty in the photographs. The reality is you could easily get 12 decent sized squares out of this recipe and you'll still have trouble getting your mouth round them because they are really thick!
You might have guessed that Rice Krispie Treats are very simple to make. This is a lovely recipe to make with the kids because it's so fun and easy.
Perfect for lunchboxes, snacks, a bake sale and of course, make the ultimate party food. Oh, and I haven't met one adult that hasn't fallen head over heels for them.
Amy's tip: This recipe can be easily veganised! The Lotus Biscoff spread AND Biscoff Creams are certified vegan. Substitute the butter for a plant-based alternative. Use vegan mini marshmallows - The brands Dandies and Freedom are brilliant. Top with vegan white chocolate.

What you need
- Butter: use salted or unsalted depending on your preference.
- Biscoff spread: I've found the smooth kind works best.
- Mini marshmallows: I used all white because if you use pink and white ones they'd go a funny colour when combined with the Biscoff.
- Rice Krispies: AKA Rice Bubbles, Rice Crispies, Puffed Rice Cereal. The supermarket own version will be absolutely fine to use.
- White chocolate: a layer of white chocolate on top just adds to the overall yumminess of the chewy Rice Krispie Treats. Swirl in a little Biscoff spread and add a round Biscoff Cream biscuit for decoration.
Top tips
- Weigh your ingredients and line a 20cm with baking paper beforehand as the recipe needs you to move through the steps quickly.
- Melt the butter and Biscoff spread very gently over a low heat. If the spread gets too hot it will split and go grainy.
- When you've added the marshmallows it will take about 3 minutes for them to melt into the butter and Biscoff mixture. Use a rubber spatula and continuously stir.
- Do not take your eyes off the marshmallows because they will burn in an instant. You might need to take the saucepan on and off the heat. This will prevent the mixture from getting too hot and burning or splitting.
- Once the Rice Krispies are added you will need to work quickly to mix them in. The melted marshmallow mixture will quickly turn into sticky glue so get all the Rice Krispies thoroughly mixed in as speedily as you can.
- When transferring the coated Rice Krispies into the baking tin use the bottom of a glass to press them down. Push the glass down and twist. A spoon, your hands or a spatula will pull the Rice Krispie mixture up and you'll find it difficult to get it flat and even.
- If you refrigerate the tin to set the Rice Krispie Treats you will need to leave them to come back to room temperature before eating them. Otherwise, I'll fear for your teeth. You have been warned!!
- To cut the Biscoff Rice Krispie Treats into perfect squares, run a long sharp knife under a hot tap then wipe it dry and slice.
- Storage: wrap in clingfilm and store at room temperature for up to 5 days.

Biscoff Rice Krispie Treats
Everyone's favourite Rice Krispie Treats flavoured with Biscoff and topped with white chocolate.
Ingredients
For the Biscoff Rice Krispie Treats
- 50g Butter
- 150g Biscoff spread (smooth)
- 300g Mini marshmallows (white)
- 200g Rice Krispies
For the topping
- 200g white chocolate, melted
- 50g Biscoff spread (smooth)
- 9 Biscoff Creams
Instructions
- Line a 20cm (7.8") square tin with baking paper and set aside.
- Add the butter and Biscoff spread into a saucepan set over a very low heat. Melt together then add the marshmallows.
- Stir the mixture continuously for about 3 minutes until all the ingredients have melted together.
- Turn off the heat and tip in the Rice Krispies and work quickly to get them coated with the marshmallow mixture.
- Transfer the coated Rice Krispies to the prepared square tin. Use the bottom of a glass to push them into the tin and make the top level.
- Break the white chocolate into small pieces and put it into a heatproof bowl set over a pan of simmering water (bain marie) When the chocolate has melted, pour it on top of the Rice Krispies and use a spatula to evenly spread it across.
- Warm the Biscoff spread (50g) for 20 seconds in the microwave, add it to a piping bag with the end snipped off and drizzle it in lines over the top of the white chocolate. You can also use a spoon to do this if you don't have a piping bag. Drag a cocktail stick through the Biscoff spread in the opposite direction to make the swirl patter.
- Add 9 Biscoff Cream biscuits on top and push them into the chocolate. Leave to set for 2-3 hours.
