This vegetable pizza is the answer to your midweek dinner prayers.
It has everything: a crisp Italian base, tasty veggies, oozing mozzarella and topped off with fresh rocket drizzled with olive oil is a recipe made in pizza heaven.
Using pre-made Italian pizza bases guarantees this vegetable pizza will be on the table in under 20 minutes.
A recipe such as this lends itself to being completely adaptable depending on what veggies you have in the fridge but red onion, red pepper and courgette is such a good combination and the vibrant colours make for a really attractive looking pizza that everyone will want to eat.

Vegetable Pizza Ingredients
- 2 red onions
- 2 courgettes
- 2 red peppers
- 2 balls mozzarella
- 2 garlic cloves
- 4 tablespoons tomato puree
- 2 Italian pizza bases
- 50g grated Italian hard cheese
- 2 tablespoons olive oil
- black pepper
- 2 bags rocket
Vegetable Pizza Method
- Preheat your oven to 220ºC/200ºC Fan/Gas 7. Peel and slice the red onion into thin half moons. Chop the red pepper into thin strips. Trim the ends from the courgette and slice into rounds about ½cm thick. Peel and grate or finely chop the garlic. Drain the mozzarella and pat it dry with kitchen paper then tear it into small pieces.
- Add the garlic and tomato puree to a bowl and stir to combine. Spread evenly onto the pizza bases using the back of a spoon leaving a small space around the edges for the crust.
- Top the pizza bases with the red onion, red pepper and courgette and fill any gaps with the mozzarella. Sprinkle over the Italian hard cheese and a drizzle of olive oil. Season with plenty of black pepper.
- Put the vegetable pizzas in the oven and cook until the base is golden around the edges and the cheese is melted and bubbly, about 12-15 mins.
- While the vegetable pizza cooks, pop the rocket in a mixing bowl and toss with a drizzle of olive oil and a pinch of salt and pepper. Toss gently to coat the leaves.
- Once cooked, pile the rocket into the centre of the vegetable pizzas and serve.

What Base is Best for Pizza?
A homemade pizza base is probably the best tasting overall but honestly, I think I've only made them myself once or twice. I find pre-made pizza bases to be very good and they're just more convenient and quick, especially if you're time poor.
If you can't find a good pre-made Italian pizza base try a garlic bread pizza instead, it actually works really well. You could also use pitta bread, naan bread or tortillas as bases.
