Liven up your Easter Breakfast with this amazing bread and butter waffle pudding! Layers of waffles are stuffed with Cadbury Creme Eggs, Mini Egg Chocolate, Galaxy Enchanted Eggs and covered with homemade custard.

I have a lot of Easter dessert recipes so I thought I'd switch things up a bit by coming up with a unique and fun Easter breakfast.
On Easter morning we've often had a bread and butter pudding made from hot cross buns, so I took my tried and tested recipe and gave it a waffle twist.
Could you get any more delicious than waffles covered in custard and stuffed with Easter chocolate?
This fun breakfast is so easy to put together, it can be done in just a few minutes.
The bottom layer of waffles soak up the custard while the top ones go lovely and crisp - so you have the best of both worlds.
With the addition of Cadbury Creme Eggs and the delicious mini egg chocolate plus all the other Easter goodies, every mouthful is chocolatey gooey heaven!
Speaking of the mini egg chocolate bars, I found them in Tesco. They are new to the range and I love them. Mini eggs in the form of a chocolate bar is always going to be a winner in my eyes.
As I mentioned this is an incredibly easy Easter breakfast to make. You could even put it together one or two days before and then reheat it as needed.
You'll need 8-10 good-sized waffles. I bought mine in Lidl but you can use any type of waffle you like.
How to make it
Break half the waffles into large chunks and arrange the first layer on the bottom of the casserole dish.
Amy's tip: I used my Le Creuset Rectangular Casserole Dish for this recipe. It measures 32cm in diameter. You can use any similar size ovenproof dish for this, or even a deep oven tray.
Next add the mini Cadbury Creme Eggs. Break the mini egg chocolate bar into individual pieces and place it in and around the waffles.
Tear the remaining waffles into large chunks and add them as a second layer.
To make the custard, combine the milk and double cream. Add two eggs and whisk. Then pour in the vanilla extract and whisk again.
Pour the custard over the waffles and bake in the oven for 30 mins or until the custard has set.
Remove from the oven and sprinkle over the Galaxy Enchanted Eggs. Add a handful of chocolate chips and the large Cadbury Creme Eggs.
Serve immediately while everything is still warm and gooey.
Any leftovers can be reheated for a couple of minutes in the microwave.
If you don't have waffles you could always use hot cross buns, brioche or croissants.
You can also use any Easter chocolate you fancy, have fun and Happy Easter!

Easter Breakfast Waffles

Ingredients
- 8-10 large Waffles
- 110g Cadbury Mini Egg chocolate bar, (1 bar)
- 78g Cadbury Mini Creme Eggs, (1 packet)
- 300ml (1 cup) milk
- 300ml (1 cup) double cream
- 2 large eggs
- 1 tsp vanilla extract
- 2-3 Cadbury Creme Eggs, halved
- 25g (2 tbsp) chocolate chips
- 80g Galaxy Enchanted Eggs, (1 packet)
Instructions
- Preheat the oven to 170ºC/150ºFan/Gas3/325ºF

Notes
Easter Breakfast Waffles can be made 2 days ahead.
Keep refrigerated.
Leftovers can be reheated for a couple of minutes in the microwave.
